Spinach pie and Breakfast Bake

I love spinach pie, but my husband can't call it a dinner unless he gets served some type of meat, so I always make my turkey sausage egg bake as well when I make a spinach pie. I seriously can't have one without the other now.







Spinach pie - one box frozen chopped spinach, chopped medium onion, 2 tbs olive oil, 2 tbs butter, 3 cloves minced garlic, 8 oz crumbled feta cheese, 1/2 cup shredded cheddar, 3 eggs, 2 egg yolks, 1 cup heavy cream, nutmeg, salt and pepper to taste. Pour into deep dish pie crust.
Melt butter and olive oil in a large skillet. Sautee the onion and garlic till translucent. Thaw and drain spinach , give a rough chop and add to mixture till hot. Take off heat and add feta. In a large bowl mix eggs, cream, cheddar, nutmeg, salt and pepper. Add the skillet mix to bowl and then transfer to a deep dish pie crust. Bake at 355 for about an hour.

Egg bake - 3 eggs, 1 egg yolks, 1 cup heavy cream, salt, pepper, parsley, 2 3/4 cups cheddar cheese, 10 turkey sausage links cut into bite sized pieces. Pour into deep dish pie crust. Combine all ingredients in a large bowl, then transfer to deep dish pie. Bake at 355 50 minutes to an hour.
