Herb Bean Bread

This is one of my favorite apps. It's simply French baguette, cooked white beans slightly mashed or puréed mixed with rosemary, sage and thyme. Cook the bean and herb mixture with a little olive oil and spread on baguettes, then drizzle liberally with evoo. Yum, amazing with wine.

I found the recipe to these Island cookies in a Nestle Tollhouse dessert book given to me by my mother in-law. The combination of coconut, butter, milk chocolate, and walnuts is phenomenal.

Irish Soda Bread

It's a tradition to make Irish Soda bread in March. I followed my mother's recipe exactly and my husband and I ate half a loaf just last night. It's so good, make sure you smother it with soft butter. It's so good!

Mint chocolate ice cream cake

I made this recipe up just based on other icecream cakes I've tried. Simply layer 4 ice cream sandwiches on a platter, spread a layer of softened mint chocolate chip icecream then another 4 ice cream sandwiches. Cover in cool whip and sprinkle with Oreos and freeze. Work quickly. Serve with Sanders hot fudge when ready to indulge! (Optional)

Cashew chicken

This is a recipe I found online that I altered slightly to taste more savory than sweet. It's one of the ways I can get my husband to eat a large variety of veggies, because everything is smothered in delicious garlic lemon gravy.

Spinach pie and Breakfast Bake

I love spinach pie, but my husband can't call it a dinner unless he gets served some type of meat, so I always make my turkey sausage egg bake as well when I make a spinach pie. I seriously can't have one without the other now.

Greek pita pizza

This is a quick fix for dinner when I have ground turkey on hand. It's not traditional Greek, I'd say it's just inspired from. It's easy to make, a  nice alternative to taco night.

Barbecue chicken pizza

Top a layer of tangy barbecue sauce with freshly grated mozzarella, grilled chicken slathered with sauce, feta, and banana peppers, bake and devour.

Hot corn dip

Made with corn, onion, red bell pepper, black beans, green onion, jalapeño, pepper jack cheese, cheddar, mayo and cayenne pepper.

Irish beef stew

This was my first crack at making a beef stew, it was timely but worth it. I made this for St.Patrick's day weekend along with the recipe for my mother's Irish soda bread. This meal was more than enough to feed me and my husband for 2 dinners and maybe a lunch.

  I bought 2 lbs of beef, browned it in oil, then added 4 cups of water, 4 bouillon cubes, 1 tsp dried rosemary, 3 tbs parsley and pepper to taste....simmered for 1 hour then added one onion, 6 large carrots, 4 stalks of celery and 6 good sized red potatoes. Stewed another hour. I thickened the gravy by dissolving corn starch in water and adding some of the hot broth. I served this with homemade Irish soda bread, my husband loved this meal, very hearty, definitely a mans meal.

Homemade honey mustard dressing on baby green salad

This is one of my favorite lunches to make because it's so easy and healthy. I always keep baby greens on hand, also usually have some sort of chicken in my fridge or freezer as well. To make the honey mustard, combine olive oil, light mayo, Dijon mustard, honey, lemon juice, flaked onion, and parsley, whisk it all up and drizzle over baby greens, chicken and slivered almonds. Yum! I could eat this every day.

Greek lemon rice soup

This soup will make your whole home smell heavenly. It's a simple delicious combination of chicken broth, white rice, freshly squeezed lemons and fresh parsley. Cook 1/2 cup white rice in one quart chicken broth, until rice is cooked. Combine juice of 3 lemons with 2 eggs and 5 tbs fresh parsley, incorporate the hot broth into the egg mixture before adding it to the pot with a whisk, mix and let thicken. I also added some chicken breasts to make it more of a meal. Serve with French bread or oyster crackers.
